Søren Peter Lauritz Sørensen

1868-1939

Danish biochemist best known for introducing the pH (potential of hydrogen) scale for measuring the acidity or alkalinity of solutions (1909). Sørensen did extensive work on enzymes and proteins. His laboratory successfully crystallized egg albumen in 1917, an important step in attempts to characterize proteins. Sørensen also contributed to medical research on epilepsy and diabetes as well as being involved in chemical application in industry, working on explosives and with spirits and yeast.
