akpiti West African; fried doughnuts made from maize (sometimes plantain) flour; the dough is left to undergo a lactic acid bacterial fermentation. Part of the fermented dough is boiled (aflata), mixed with the remainder and fried. Awule bolo is similar, but made with rice flour, banku from sorghum, millet, or barley.
