exopeptidases Proteolytic enzymes that hydrolyse the peptide bonds of the terminal amino acids of proteins or peptides, as opposed to endopeptidases, which cleave at sites within the peptide chain. There are two groups: aminopeptidases which remove the amino acid at the amino terminal of the protein, and carboxypeptidases, which remove the amino acid at the carboxyl terminal.
