SIDELIGHTS: A New Orleans institution since 1918, Arnaud's was one of the fortunate establishments to survive the devastation of Hurricane Katrina that struck the Louisiana city in 2005. In Arnaud's Restaurant Cookbook Kit Wohl, who has overseen Arnaud's marketing since the early 1980s, provides the Creole recipes that have made the eatery famous, as well as the stories behind particular dishes and commentary that will help aspiring chefs reproduce the true flavor of these recipes. Some of the dishes go back to Arnaud's earliest days, as can be seen on the reproduction of an early menu (with Oysters Rockefeller for fifty cents, among other treats). Others are reworkings of old Creole staples, such red beans and rice. Different sec-tions cover the famed entrees of the main dining room, the surprisingly numerous ways to prepare poached eggs for brunch, and the rich desserts that have delighted customers for decades. At the same time, the photographs throughout the book show the restaurant itself to its best advantage. "Devotees of historic New Orleans cooking will appreciate all that this book offers," concluded Booklist reviewer Mark Knobloch. Similarly, Library Journal contributor Sean Michael Fleming found that it "serves as a tribute to the institution's culinary staying power."
