mussels Various marine bivalve molluscs, Mytilus edulis, M. californianus. Greenshell mussels (Perna canaliculus), so‐called because of their emerald green shell markings, are native to New Zealand. A 100‐g portion of boiled flesh (330 g with shell) is an exceptionally rich source of iodine, a rich source of protein, iron, copper, and selenium; a good source of calcium, vitamin B2, and niacin; a source of zinc, and contains 200 mg of sodium; supplies 90 kcal (380 kJ).
